I miss papaya from the time that I spent in Thailand. I could get it fresh on the street at just about any time. So when I found that I could buy a bag of frozen papaya at my local Safeway, I decided to see if I could make a sorbet with it.
The flavor isn't strong, but enjoyable!
Ingredients
- 1 bag (~12 Oz) of frozen papaya, thawed
- 1/4 cup lemon juice (1 - 2 lemons)
- 1/4 cup cane sugar
- 1/4 cup water
Instructions
- Thaw the papaya
- You don't want it warm, just not frozen
- Blend the papaya so it isn't chunky
- It doesn't need to be smooth; just not large chunks
- Prepare the lemon juice
- Cut the lemons
- Squeeze the juice out of the lemons
- Scrape out the lemon pulp if you like
- Blend the lemon juice and pulp
- In a medium mixing bowl, combine 1.25 to 1.5 cups papaya puree (from step 1), 1/4 cup cane sugar, 1/4 cup lemon juice (from step 3), and 1/4 cup water.
- Stir the mixture until smooth
- Pour the mixture into a CREAMi pint (up to the "max fill" line)
- Freeze for 24 hours
- Spin as "sorbet"
- Serve and enjoy!
